Addresses the concern raised by @hasufell in #12076 (comment)

This PR keeps the single build (and published artifact) per platform and reinstates cross-distro testing of that artifact:

x86_64-linux: Alpine 3.21 (as currently), plus Debian 12, Ubuntu 24.04 and Fedora 44;
aarch64-linux: Alpine 3.21 (as currently), plus Debian 12.
