Span attributes went through variant_to_sentry_value, so dictionaries and arrays were serialized structurally while every other attribute surface stringifies them. Documenting that would promise behavior the span-first attribute protocol will not keep. Split the type switch out of variant_to_attribute so spans can reuse it without the type tag that belongs on logs and metrics.
