Fix generate invoice number flow on agencyOS
* Set root folder for images

This PR addresses the need to set a root folder for images used in the frontend to make it accessible for the public.

The following collections are affected by this change:
- block_columns_rows
- block_gallery
- block_hero
- block_step_items
- posts

* Setting root folder to `gallery` field from `posts` collection
* remove old website cms template

* simple crm

* simple ecommerce

* simple website

* fix regex validation

Add docker-compose, .env.example, and directus:template config to
agencyos, simple-crm, simple-ecommerce, simple-website-cms, and
help-center so they work with directus-template-cli init.
AgencyOS template now lives at directus-labs/agency-os as a
self-contained monorepo that the CLI can reference directly.
