Observed behavior
I had issues with the previous version pretty much like described in the closed thread "Mounting any volume immediately triggers Blue Screen of Death: PAGE_FAULT_IN_NONPAGED_AREA (veracrypt.sys) on Windows 11", the one difference being I'm still on Windows 10.
Following the advice I installed version 1.26.28 64bit MSI and rebooted (presumably to install the new driver).
1st try on mounting using the newer version immediately resulted in the same BSOD again.
What I DID notice using the previous version was that opening a volume didn't ALWAYS result in an immediate BSOD - on rare occasions it simply worked which might or might not have been related to me playing around with certain mount options, like mounting it without cache, disabling keeping the key in memory or mounting it as removable drive. I didn't try it often enough though to make any educated guesses if any of the settings made it work or if it was purely random.
Not sure about anti virus interference: the first few BSODs happened while using BitDefender, the most recent ones using Windows' own Defender.
