core: bump version to 0.2.0 for board/arch split

Update EmbedDIP semantic version from 0.1.0 to 0.2.0 to reflect
build/config contract changes introduced by the board/arch/cpu
decoupling and related refactors.

This release marks a compatibility boundary for consumers migrating from
the legacy single-platform selection flow.
